If you had to pick a character and stick to it forever...

What would it be? It can be anything you can do in a standard character creation. And nothing else for eternity! Sure, if you roll a Human and get stats making you eligable for dual classing, that's a permitted option. You're still technically running with the character you rolled, right? Good.

As for me:

Male. Most romance options in BG2. Mostly irrelevant, but you get 3 as male and 1 as female.

Human. For dual class purposes.

Fighter. I suppose any kit could do, (mostly looking at Berserker, right?) but if nothing else, plain Fighter. Because they are IMO the best basis for any dual class. It makes sense to dual class a Fighter into Class X, but less so reversed. It's not impossible and in some cases has merit, like Mage 2 -> Fighter for a little extra mojo, but overall Fighter -> Class X seems more profitable.

True Neutral. No alignment restriction in dual classing.

Stats. I would at the very least have to do an initial roll, where I had to fulfill the bare minimums of all possible dual classes. it would be along the lines of 15, 17, X, 17, 17, 17 after all tomes, so it would be initial scores like 14, 16, X, 16, 14, 16. If aiming for max Constitution, it would have to be a total stat score roll of 94, which doesn't seem like a hard number to reach, even as a Human Fighter. This is, of course, the bare minimum. I'd try to roll higher and at least aim for a decent Strength percentile, because I'm greedy like that.

Yeah, somewhat the generic Abdel Adrian, I suppose. But with some options and replay value, at least.

    Not in BG2EE.
5 as male, 4 as female.

So, Anomen, Jaheira, Aerie and Viconia. That seems like 4 to me.

I don't think I could choose just one? I mean, I have my *favorites* like Cavalier, fighter dualed to cleric, a few others. But changing things up on the *character* side of things is what keeps it interesting. The motivation, the quirks, the details must change even if I *always* play as some sort of good-aligned heroic type.

It's the official Beamdog forum for the Enhanced Edition of the games, and the BG2EE have the ones I mentioned. Not liking them is fine, but they are still options regardless.
Some players don't like Anomen or Aerie romances, it doesn't mean they don't exist in the game.

Well, they're not options for me. Fine if they are for you. Let's hear about your character with that.

If I am playing a female I always romance Hexxat. Best thief in the game, considering her Vampire powers and immunities. Once her Children of the Night ability starts summoning shadows, things just get silly. As for what to play as MC? Half-Orc Berserker with Grand Mastery in Halberds and a bunch of Greater Whirlwinds. For wielding Ravager +6, of course. I ended up at level 31, with a THACO of -11 and a base APR of 7/2 by the time we hit the final fight in ToB. That's not even counting Greater Whirlwind which produces an APR of 10. Bosses, of course, are immune to being decapitated, but everything else was just vaporized instantly.

I love flexibility & versatility, so Multiclasses are my jam, especially the Fighter/Mage/Thief. I soloed BG1 "classic" (prior to EE) with a CG Male F/M/T with a natural roll of 16/18/17/14/14/16, and I'm currently attempting to duplicate that in EE with basically the same character, only this time it's cheesy-as-hell, with the highest stats I've ever rolled on a F/M/T: 18(48)/19/17/18/11/18.

I could easily see sticking with that multiclass forever. There's almost nothing it can't do, and I think the only things I really miss are Chaotic Commands & Insect Plague.

Mage 2 -> Fighter is actually HUGE. Your Familiar alone balances out the lost hitpoints, which was the only disadvantage. So that's two free Identifies every single day, an extra outlet for all those extra wands & scrolls that you always wind up hoarding, truly threatening use of Wizard-only items like the Staff of the Magi, and probably the most terrifying version of the Vhailor's Helm -> Time Stop cheese possible. The only disappointment is the "inability" to choose a kit, as every Specialist Mage locks out at least one scroll that you're really going to want to be able to use later on . . . a drawback that far outweighs the benefit of just 1 additional Level 1 spellslot per day. (A Wild Mage 2 -> Fighter, however, would be insanely overpowered: Can you imagine using Nahal's Reckless Dweomer to cast Time Stop, 3x a day? There's a good chance that that's the reason why Wild Mages can't Dual-class.)

Saying fighter and then talking about the infinite variety of dual options kind of defeats the purpose of the question imo.

My take on your question would be male human stalker, chaotic good i guess. I don't really care about romance options most playthroughs but Jaheira and Viconia are probably the best written ones. Fine with having to settle for a mostly good party.

Stealth is actually really strong throughout the saga, but it synergizes poorly with your character that's detecting traps. Or even other stuff like lockpicking, to a lesser extent. High level ranger scouting provides incomparable non-tedious utility.

You don't have to focus on backstab. It's there for when situations call for it, but your stealth is mostly to scout. This character will do fine with ranged options, dual wielding, two-handed weapons, etc. So you can play with a variety of weapon set-ups in different runs. In fact you can be different across a single playthrough. Longbows in BG1 where ranged rules. Backstabs and/or tanky melee for SoA when that's a bit better. And lastly dual-wielding berserkery in ToB.

This one is easy for me because I nearly always play the same character: a female cavalier called Hope. I always use the same portrait for her:
    bmmepypeb9oj.png
I also always use the same voice set: Female Fighter 3 from Icewind Dale (It's the one with the first line: "I am prepared . . . I hope).
I have lost count of the number of times she and Imoen have set off from Candlekeep. But I play no-reloads and I always mess up at some point so they have never yet faced Sarevok and I have never yet managed to export my character to BG2.

half-orc fighter thief wielding a two handed sword

hugely versatile and two handed sword is my favourite weapon in the bg games, mostly just for aesthetic purposes

    although, the time i hit ToB i have;

    over 200 HP
    at least -16 AC
    75% MR
    23 STR
    21 DEX
    22 CON
wielding a holy avenger ( +6 ) with the ability to deal over 30 damage on a normal hit
    the ability to set traps
200% pick pocket so i never have to buy spell scroll when you can just yoink them instead

and i grab greater whirlwinds and hardinesses faster than a single class fighter does

never been disappointed with this class combo

Mine would be a Male Elven Fighter/Mage. Best of both worlds, fighting and magic. I have a tendency to play the same character and group. PC, Jaheira, Minsc, Dynaheir, Imoen and Drake (replaced with Branwen if Mods not allowed).
